Comme l&rsquo;explique Julien Willems, les drams au profil \u00abEpic\u00e9 et sec\u00bb sont parfaits pour un voyage sensuel et sensoriel.<\/strong><\/p>\n<p>On peut prendre spontan\u00e9ment ses vacances d&rsquo;\u00e9t\u00e9, mais, le plus souvent, il vaut mieux les planifier, si on veut les passer dans les endroits dont on r\u00eave. Pendant l&rsquo;hiver (ou m\u00eame durant les mois d&rsquo;\u00e9t\u00e9 si vous vivez en \u00c9cosse\u2026), beaucoup r\u00eavent de chaleur et de saveurs estivales : nos scotchs \u00abEpic\u00e9 et sec\u00bb vous en offrent en quantit\u00e9 g\u00e9n\u00e9reuse.<\/p>\n<p>Avec sa cascade de notes bois\u00e9es, exotiques et \u00e9pic\u00e9es, ce profil est une v\u00e9ritable rivi\u00e8re de d\u00e9lices qui n&rsquo;est pas pr\u00eate de s&rsquo;ass\u00e9cher, les diff\u00e9rents courants aromatiques y fusionnant pour former des exp\u00e9riences uniques et inattendues.<\/p>\n<p>La source de tout cela est naturellement la qualit\u00e9 du \u00abspirit\u00bb, le distillat avant la maturation. Cela peut expliquer des saveurs comme le rhum et le raisin sec, ces deux \u00e9l\u00e9ments \u00e9tant \u00e9galement riches en esters. C&rsquo;est bien connu, les esters sont des compos\u00e9s aromatiques actifs dans le whisky qui sont souvent associ\u00e9s \u00e0 des saveurs fruit\u00e9es. Ils proviennent de la fermentation du malt par les levures pendant la production du whisky.<\/p>\n<p>Comme pour d&rsquo;autres profils aromatiques, ils peuvent \u00eatre abondants ou associ\u00e9s de mani\u00e8re caract\u00e9ristique \u00e0 une surabondance d&rsquo;ar\u00f4mes allant des agrumes et de la pomme \u00e0 la mangue et \u00e0 l&rsquo;ananas. Et ils sont bien l\u00e0, c&rsquo;est certain : on retrouve, sans exception, toutes les distilleries dont l&rsquo;un des f\u00fbts s&rsquo;est retrouv\u00e9 dans le profil \u00abEpic\u00e9 et sec\u00bb \u00e9galement dans d&rsquo;autres profils plus fruit\u00e9s. Donc, pour tirer au clair cette \u00e9nigme gustative, il va nous falloir suivre les bons vieux f\u00fbts de whisky en bois et voir o\u00f9 ils nous m\u00e8neront sur cette rivi\u00e8re de saveurs.<\/p>\n<h2>Le r\u00f4le des compos\u00e9s<\/h2>\n<p>La premi\u00e8re \u00e9tape de notre croisi\u00e8re, ce sont les \u00e9pices (clou de girofle, bois de santal, noix de muscade) des whiskies \u00abEpic\u00e9 et sec\u00bb.<\/p>\n<p>Le responsable probable de ces saveurs, c&rsquo;est le f\u00fbt. Comme nous l&rsquo;avons vu pour le profil de go\u00fbt \u00ab\u00c9pic\u00e9 et sucr\u00e9\u00bb, \u00ab\u00e9pic\u00e9\u00bb appliqu\u00e9 au whisky est un terme un peu fourre-tout pouvant d\u00e9signer \u00e0 la fois les effets de la robustesse de l&rsquo;alcool et ceux de divers compos\u00e9s aromatiques actifs.<\/p>\n<p>Parmi ces derniers, certains sont \u00e9galement bien connus pour leur lien avec les ar\u00f4mes \u00e9pic\u00e9s. L&rsquo;eug\u00e9nol est commun\u00e9ment associ\u00e9 aux ar\u00f4mes de clous de girofle et d&rsquo;essence de girofle, tandis que le ga\u00efacol est g\u00e9n\u00e9ralement consid\u00e9r\u00e9 comme ayant des caract\u00e9ristiques \u00e9pic\u00e9es et fum\u00e9es moins sp\u00e9cifiques. Ces compos\u00e9s sont d\u00e9riv\u00e9s de la lignine, le principal composant du bois.<\/p>\n<p>La lignine se d\u00e9compose en vanilline et en d&rsquo;autres compos\u00e9s comme l&rsquo;eug\u00e9nol et le ga\u00efacol, dans des concentrations relatives diff\u00e9rentes, en fonction du traitement thermique auquel le bois de ch\u00eane a \u00e9t\u00e9 soumis. L&rsquo;interaction qui en r\u00e9sulte avec d&rsquo;autres saveurs peut cr\u00e9er un spectre d&rsquo;ar\u00f4mes que nous percevons comme \u00e9pic\u00e9s, entra\u00eenant nos sens plus loin sur la rivi\u00e8re sensorielle, vers des latitudes exotiques et ensoleill\u00e9es.<\/p>\n<h2>Le r\u00f4le des tanins<\/h2>\n<p>Plus loin en aval, nous apercevons une for\u00eat et d\u00e9barquons pour l&rsquo;explorer. Imaginez que vous vous appuyez contre un arbre par une chaude journ\u00e9e d&rsquo;\u00e9t\u00e9, que vous respirez, que vous vous immergez dans votre environnement.<\/p>\n<p>Vous sentez une odeur qui vous est peut-\u00eatre famili\u00e8re\u00a0: de l&rsquo;\u00e9corce d&rsquo;arbre\u00a0? De tels ar\u00f4mes sont souvent associ\u00e9s \u00e0 une sensation en bouche particuli\u00e8re, d\u00e9crite comme gommeuse, l\u00e9g\u00e8rement crayeuse ou poudreuse, typiquement associ\u00e9e aux tanins. Les tanins sont pr\u00e9sents dans toutes les vari\u00e9t\u00e9s de ch\u00eane, mais leur concentration varie consid\u00e9rablement d&rsquo;une vari\u00e9t\u00e9 \u00e0 l&rsquo;autre, d&rsquo;une for\u00eat \u00e0 l&rsquo;autre et m\u00eame d&rsquo;un arbre \u00e0 l&rsquo;autre dans une m\u00eame parcelle de for\u00eat.<\/p>\n<p>Ainsi, m\u00eame si votre whisky a \u00e9t\u00e9 vieilli dans un f\u00fbt de ch\u00eane am\u00e9ricain Quercus alba typique, que nous avons pr\u00e9c\u00e9demment associ\u00e9 \u00e0 des ar\u00f4mes plus doux, de noix de coco et de vanille, il est tout \u00e0 fait possible que le r\u00e9sultat soit un whisky plus \u00e9pic\u00e9 et plus sec, selon l&rsquo;arbre dont le f\u00fbt est fait.<\/p>\n<h2>Le r\u00f4le de la tonnellerie<\/h2>\n<p>Avec cela en t\u00eate, nous nous dirigeons vers une tonnellerie dans une clairi\u00e8re. En regardant les registres des f\u00fbts mis en bouteille par la Soci\u00e9t\u00e9 depuis 2014, une grande majorit\u00e9 des whiskies \u201eEpic\u00e9 et sec\u00bb de certaines distilleries (notamment 13, 41, 44 et 77) proviennent de f\u00fbts de bourbon (du premier remplissage \u00e0 la recharge dans des proportions relativement \u00e9gales).<\/p>\n<p>Nous avons expliqu\u00e9 pr\u00e9c\u00e9demment que les tonneliers disposent d&rsquo;un grand pouvoir de contr\u00f4le pour s\u00e9lectionner les douelles et choisir l&rsquo;intensit\u00e9 du traitement thermique effectu\u00e9 afin d&rsquo;influencer les ar\u00f4mes dispens\u00e9s par les f\u00fbts qu&rsquo;ils fabriquent. C&rsquo;est un point int\u00e9ressant, car les distillateurs de whisky \u00e9cossais passent souvent des accords pour acheter des f\u00fbts de bourbon fra\u00eechement vid\u00e9s \u00e0 des distilleries de bourbon partenaires.<\/p>\n<p>On peut donc penser qu&rsquo;il y a un lien de cause \u00e0 effet entre les choix de tonnellerie d&rsquo;un distillateur de bourbon et la propension \u00e9lev\u00e9e de certaines marques de whisky \u00e0 voir leurs whiskies vieillis en f\u00fbts de bourbon se retrouver class\u00e9s dans le profil aromatique \u00abEpic\u00e9 et sec\u00bb.<\/p>\n<h2>Des \u00e9pices et du soleil<\/h2>\n<p>Mais laissons de c\u00f4t\u00e9 ces consid\u00e9rations et retournons \u00e0 la rivi\u00e8re. Laissons-nous porter plus en aval, jusqu&rsquo;\u00e0 une villa isol\u00e9e avec un bar bien approvisionn\u00e9.<\/p>\n<p>Dans l&rsquo;ensemble, les whiskies de ce profil sont issus d&rsquo;une vari\u00e9t\u00e9 de f\u00fbts ayant servi \u00e0 la maturation de bourbon, de sherry, de vins secs, doux ou fortifi\u00e9s, voire d&rsquo;IPA et de rhum. On dit que la vari\u00e9t\u00e9 met du piment dans la vie, et, en guise d&rsquo;\u00e9pices, ce profil apporte certainement de l&rsquo;eau \u00e0 ce moulin. Plein de facettes diff\u00e9rentes et difficiles \u00e0 cerner, \u00abEpic\u00e9 et sec\u00bb vous entra\u00eenera dans des voyages au royaume des \u00e9pices et du soleil.<\/p>\n<p>Alors, si vous
