Alors que les vents se l\u00e8vent et commencent, z\u00e9l\u00e9s, \u00e0 d\u00e9pouiller les branches de leur feuillage, sur les flancs des collines, chaque arbre et arbuste semble rougir de pudeur. L&rsquo;or et le cuivre, aussi ardents que la barbe de notre responsable des spiritueux, nous rappellent les braises de nos feux de camp de fin d&rsquo;\u00e9t\u00e9. Avec le changement de saison, ils brillent maintenant dans la s\u00e9curit\u00e9 de l&rsquo;\u00e2tre des bothies, ces refuges de montagnes \u00e9cossais. Car la nuit, l&rsquo;air se rafraichit, il se fait humide et souvent \u00e9pais, tout empli des brumes exsudant le parfum des feuilles mortes. Et les feuilles tombent en effet lorsque les foug\u00e8res prennent la couleur de la rouille. Aujourd&rsquo;hui, il s&rsquo;attaque au c\u0153ur du sujet: comment se forme la tourbe? Comment les diff\u00e9rents types de tourbe affectent-ils les saveurs que nous percevons dans nos drams?<\/p>\n<p>C&rsquo;est le moment de conter les histoires de la terre et du cycle de vie \u00e9cossais, des for\u00eats disparues depuis longtemps et des landes de bruy\u00e8re c\u00f4ti\u00e8res, de l&rsquo;eau, de la terre et du feu. Pour la formation de la tourbe, l&rsquo;eau est absolument essentielle. La raison en est \u00e9vidente: la tourbe est l&rsquo;accumulation de mati\u00e8res v\u00e9g\u00e9tales et organiques partiellement d\u00e9compos\u00e9es dans des conditions froides (du moins pour les tourbi\u00e8res \u00e9cossaises), acides et humides. Elle se forme donc dans les zones humides, les marais et les tourbi\u00e8res o\u00f9 la pr\u00e9sence d&rsquo;eau et l&rsquo;absence d&rsquo;oxyg\u00e8ne font que les plantes mortes ne se d\u00e9composent que partiellement, au lieu de se transformer en compost ou en poussi\u00e8re. Une fois fan\u00e9s, les restes des plantes sont compact\u00e9s en tourbe dans leur environnement mar\u00e9cageux durant des milliers d&rsquo;ann\u00e9es. Laiss\u00e9e \u00e0 elle-m\u00eame pendant des millions et des millions d&rsquo;ann\u00e9es, la tourbe peut, dans de bonnes conditions, se transformer en charbon, en goudron ou en p\u00e9trole. Mais ce n&rsquo;est pas ce qui nous int\u00e9resse ici, \u00e0 moins que vous ne soyez \u00e0 la recherche de dinosaures liquides. Si c&rsquo;est ce que vous recherchez, essayez de mettre la main sur notre blended malt produit en petit lot, Tar Pit.<\/p>\n<h2>Contes des marais et tourbi\u00e8res<\/h2>\n<p>Donnez libre cours \u00e0 votre imagination. La glace fond dans une toundra d\u00e9sol\u00e9e, les hurlements du vent glacial et les craquements de glaciers gigantesques sont les seuls bruits emplissant l&rsquo;air. Puis les premiers colons apparaissent, \u00e9rigeant des pierres \u00e9nigmatiques, si lourdes que les glaciers n&rsquo;avaient pu les transporter jusqu&rsquo;\u00e0 la mer. Vinrent ensuite les p\u00e9riodes d&rsquo;abondance et les p\u00e9riodes de conflit, celles de paix, de guerre ou de renaissance. Ces tourbi\u00e8res sans \u00e2ge ont \u00e9t\u00e9 t\u00e9moins de tout cela, tandis que les bruy\u00e8res, les carex et les mousses ont grandi, v\u00e9cu et fan\u00e9, emportant avec eux quelque chose de ces \u00e9poques dans la terre.<\/p>\n<p>Et c&rsquo;est l\u00e0 que les choses deviennent int\u00e9ressantes. En fonction de leur emplacement, de leur histoire et de leurs conditions climatiques, chaque tourbi\u00e8re a \u00e9volu\u00e9 pour accueillir des plantes et des \u00e9cosyst\u00e8mes diff\u00e9rents. Ainsi, la tourbe r\u00e9colt\u00e9e dans d&rsquo;anciennes for\u00eats des Highlands sera diff\u00e9rente de la tourbe c\u00f4ti\u00e8re d&rsquo;Islay, riche en mousse, ou de celle venue des tourbi\u00e8res des Orcades, riche en bruy\u00e8re. Chaque endroit poss\u00e9dant une flore particuli\u00e8re, la composition des diverses tourbes sera naturellement diff\u00e9rente. Ces diff\u00e9rences peuvent sembler mineures, et puis la tourbe met des milliers d&rsquo;ann\u00e9es \u00e0 se former. On peut donc se demander quelles caract\u00e9ristiques v\u00e9g\u00e9tales ont pu survivre aussi longtemps.<\/p>\n<h2>Comparaison des compositions<\/h2>\n<p>D&rsquo;une certaine mani\u00e8re, leur esprit survit. En comparant la mousse, la bruy\u00e8re et les r\u00e9sidus d&rsquo;arbres dans des \u00e9chantillons provenant de diff\u00e9rentes tourbi\u00e8res, Barry Harrison (PhD) du Scotch Whisky Research Institute explique: \u00abLe type et la quantit\u00e9 de lignine diff\u00e8rent entre ces plantes, et le type et la quantit\u00e9 de compos\u00e9s ph\u00e9noliques lib\u00e9r\u00e9s lors de leur combustion diff\u00e8rent \u00e9galement\u00bb. Tout d&rsquo;abord, la sphaigne, que l&rsquo;on trouve en abondance dans certaines tourbi\u00e8res d&rsquo;Islay, n&rsquo;est pas r\u00e9ellement compos\u00e9e de lignine, mais d&rsquo;un compos\u00e9 similaire remplissant le m\u00eame r\u00f4le structurel. Sa combustion produit en cons\u00e9quence une fum\u00e9e tr\u00e8s ph\u00e9nolique et m\u00e9dicinale.<\/p>\n<p>Quant aux plantes \u00e0 lignine telles que la bruy\u00e8re et les arbres, vous vous souvenez peut-\u00eatre que dans l&rsquo;article \u00ab<a href=\"https:\/\/www.smws.ch\/fr\/epice-et-sec\/\" target=\"_blank\" rel=\"noopener\">Epic\u00e9 et sec<\/a>\u00bb, nous avions dit que la combustion de la lignine pendant la carbonisation des f\u00fbts cr\u00e9e des produits comme le ga\u00efacol. Cela s&rsquo;applique ici. Donc, en th\u00e9orie du moins, la fum\u00e9e d&rsquo;une tourbe riche en lignine devrait \u00eatre plus \u00e9pic\u00e9e et plus riche en diff\u00e9rents types de ga\u00efacols, donnant des compos\u00e9s au go\u00fbt \u00e9pic\u00e9 et fum\u00e9.<\/p>\n<p>Mais ce n&rsquo;est pas tout. D&rsquo;une plante \u00e0 lignine \u00e0 l&rsquo;autre, les produits de la combustion varient. La tourbe des Orcades, riche en bruy\u00e8re, est r\u00e9put\u00e9e plus florale et parfum\u00e9e, tandis qu&rsquo;une tourbe riche en \u00e9corce et en plantes ligneuses, comme on en trouve parfois dans les Highlands, d\u00e9gage une fum\u00e9e plut\u00f4t terreuse.<\/p>\n<p>Pour ajouter encore un peu de complexit\u00e9 au sujet, les types de compos\u00e9s ph\u00e9noliques obtenus en br\u00fblant la tourbe sont \u00e9galement conditionn\u00e9s au degr\u00e9 de d\u00e9composition de la mati\u00e8re v\u00e9g\u00e9tale. En d&rsquo;autres termes, plus l&rsquo;exposition \u00e0 l&rsquo;oxyg\u00e8ne est importante et\/ou plus la dur\u00e9e de d\u00e9composition a \u00e9t\u00e9 longue, plus la fum\u00e9e contient de compos\u00e9s ph\u00e9noliques m\u00e9dicinaux et moins de ga\u00efacols \u00e9pic\u00e9s et fum\u00e9s. Donc, en th\u00e9orie du moins, les ar\u00f4mes de la fum\u00e9e d&rsquo;une tourbe obtenue en creusant plus profond\u00e9ment dans les tourbi\u00e8res riches en lignine ou dans une tourbi\u00e8re un peu plus s\u00e8che devraient \u00eatre plus m\u00e9dicinaux et moins fum\u00e9s ou \u00e9pic\u00e9s. En outre, plus il y a d&rsquo;eau dans une tourbi\u00e8re, plus les ar\u00f4mes sont \u00e9pic\u00e9s et fum\u00e9s.<\/p>\n<p>\u00abDans la pratique, les plantes comme la bruy\u00e8re ont des racines tr\u00e8s profondes, qui s&rsquo;enfoncent dans le sol jusqu&rsquo;aux strates beaucoup plus anciennes, parfois antiques, d&rsquo;un marais\u00bb, explique Barry Harrison du SWRI. \u00abCela permet d&rsquo;ajouter du bois l\u00e0 o\u00f9 la lignine s&rsquo;\u00e9tait d\u00e9compos\u00e9e depuis longtemps et en grande partie\u00bb. La r\u00e9alit\u00e9 impose toujours de nuancer la th\u00e9orie.<\/p>\n<h2>\u00c0 boire avec respect<\/h2>\n<p>N&rsquo;oubliez pas que plusieurs civilisations ont v\u00e9cu puis disparu au cours des \u00e2ges n\u00e9cessaires \u00e0 la cr\u00e9ation de chaque brique de tourbe utilis\u00e9e aujourd&rsquo;hui dans les malteries. Et l&rsquo;histoire du lieu de leur naissance, pour citer Isildur, roi l\u00e9gendaire du Gondor, \u00abest d\u00e9sormais un secret que seul le feu peut r\u00e9v\u00e9ler\u00bb.<\/p>\n<p>Mais quelle part de ce secret nous est r\u00e9ellement r\u00e9v\u00e9l\u00e9e? Et ne serait-il pas pr\u00e9f\u00e9rable que certains secrets restent enfouis \u00e0 jamais? Aujourd&rsquo;hui nous avons scrut\u00e9s les brumes lointaines des temps pass\u00e9s, mais les tourbi\u00e8res sont aussi un sujet d&rsquo;actualit\u00e9.<\/p>\n<p>Dans notre monde en pleine mutation, les questions de durabilit\u00e9 et d&rsquo;utilisation responsable de la tourbe ne peuvent \u00eatre laiss\u00e9es sans r\u00e9ponse.
