L&rsquo;un des cr\u00e9ateurs \u00e9tait Jeremiah \u00ab Jerry \u00bb P Thomas, \u00e0 qui l&rsquo;on attribue aussi d&rsquo;avoir \u00e9crit le premier livre de boissons am\u00e9ricain \u00ab How to Mix Drinks, or The Bon Vivant&rsquo;s Companion \u00bb, publi\u00e9 \u00e0 New York en 1862.<\/b><b><i><\/i><\/b><\/span><\/p><\/p>\n\n<p>Jerry Thomas est une figure fascinante, un barman pionnier, aventurier, homme d&rsquo;affaires et auteur, qui a v\u00e9cu une vie color\u00e9e durant une p\u00e9riode remarquablement color\u00e9e de l&rsquo;histoire am\u00e9ricaine.<\/p>\n\n<p>Il est n\u00e9 en 1830 ou 1832 \u00e0 Sackets Harbour, dans l&rsquo;\u00c9tat de New York, et a commenc\u00e9 sa carri\u00e8re de barman \u00e0 New Haven, Connecticut, avant de partir pour la Californie l&rsquo;ann\u00e9e apr\u00e8s que la grande \u00ab ru\u00e9e vers l&rsquo;or \u00bb y ait commenc\u00e9 en 1848. Il a travaill\u00e9 dans des bars, a peut-\u00eatre prospect\u00e9 pour l&rsquo;or et dirig\u00e9 un spectacle de m\u00e9nestrels, avant de retourner sur sa c\u00f4te est natale en 1851.<\/p>\n\n<p>\u00c0 New York City, Thomas a \u00e9tabli un saloon dans les m\u00eames locaux que le Barnum&rsquo;s American Museum, au coin de Broadway, Park Row et Ann Street \u00e0 Manhattan, mais il \u00e9tait bient\u00f4t \u00e0 nouveau en voyage, travaillant dans des h\u00f4tels et bars \u00e0 St Louis, Chicago, San Francisco, Charleston et La Nouvelle-Orl\u00e9ans.<\/p>\n\n<p>Durant cette p\u00e9riode, il a perfectionn\u00e9 son num\u00e9ro de barman flamboyant, cr\u00e9ant un personnage public qui incluait le port de bagues en diamant et de boutons de manchette ainsi que de gants en chevreau, tandis qu&rsquo;il \u00e9tait connu pour collectionner l&rsquo;art et appr\u00e9cier les combats de boxe \u00e0 mains nues.<\/p>\n\n<p>Invit\u00e9 \u00e0 faire une tourn\u00e9e en Europe, il y est arriv\u00e9 avec un ensemble d&rsquo;outils de bar en argent massif !<\/p>\n\n<h2 class=\"wp-block-heading\">Feu liquide<\/h2>\n\n<p>Central \u00e0 l&rsquo;approche th\u00e9\u00e2trale de Thomas pour m\u00e9langer les boissons \u00e9tait son cocktail signature le Blue Blazer, qu&rsquo;il a d\u00e9velopp\u00e9 au saloon de jeu El Dorado \u00e0 San Francisco. Le Blue Blazer est fait en allumant du whisky avec un peu d\u2019eau bouillante dans un pichet \u00e0 cocktail.<\/p>\n\n<p>Le liquide est ensuite transf\u00e9r\u00e9 rapidement entre deux pichets \u00e0 cocktail plusieurs fois jusqu&rsquo;\u00e0 ce qu&rsquo;il soit m\u00e9lang\u00e9, moment auquel sucre et citron sont ajout\u00e9s. Thomas aimait utiliser du whisky \u00e9cossais brut de f\u00fbt pour cr\u00e9er son Blue Blazer, et comme il l&rsquo;a \u00e9crit plus tard : \u00ab Si bien fait, ceci aura l&rsquo;apparence d&rsquo;un flux continu de feu liquide. \u00bb<\/p>\n\n<p>Thomas \u00e9tait largement responsable d&rsquo;\u00e9lever l&rsquo;art du barman au statut d&rsquo;un professionnel respect\u00e9, gagnant le surnom de \u00ab The Professor \u00bb. Tandis qu&rsquo;il travaillait comme chef barman \u00e0 l&rsquo;Occidental Hotel \u00e0 Chicago, il gagnait pr\u00e9tendument 100 dollars par semaine ; plut\u00f4t plus que le vice-pr\u00e9sident des \u00c9tats-Unis. Jamais un homme particuli\u00e8rement modeste, Thomas se d\u00e9crivait comme \u00ab Jupiter Olympus du Bar \u00bb.<\/p>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"padding-right:var(--wp--preset--spacing--50)\">\n<h2 class=\"wp-block-heading\">Une b\u00e9n\u00e9diction pour l&rsquo;humanit\u00e9<\/h2>\n\n\n\n<p>Sa contribution durable \u00e0 la culture des boissons \u00e9tait son tome de 1862, qui portait le titre impressionnant et englobant tout : \u00ab How to Mix Drinks: Or, The Bon-vivant&rsquo;s Companion, Containing Clear and Reliable Directions for Mixing All the Beverages Used in the United States, Together With the Most Popular British, French, German, Italian, Russian, and Spanish Recipes, Embracing Punches, Juleps, Cobblers, Etc., Etc., Etc., in Endless Variety \u00bb.<\/p>\n\n\n\n<p>C&rsquo;\u00e9tait la premi\u00e8re tentative de collecter des recettes de cocktails, de les \u00e9crire et de les publier sous forme de livre, et il contenait beaucoup qui n&rsquo;avaient pr\u00e9c\u00e9demment joui que de transmission orale ainsi que certaines des propres cr\u00e9ations de Thomas. Il a continu\u00e9 \u00e0 mettre \u00e0 jour le titre plusieurs fois durant sa vie, ajoutant de nouvelles d\u00e9couvertes et inventions.<\/p>\n\n\n\n<p>Dans la pr\u00e9face de son Companion, Thomas \u00e9crivait : \u00ab Il nous a frapp\u00e9 qu&rsquo;une liste de toutes les boissons sociales \u2013 les boissons composites, si nous pouvons les appeler ainsi \u2013 d&rsquo;Am\u00e9rique, serait vraiment une des curiosit\u00e9s de la litt\u00e9rature joviale ; et que si elle \u00e9tait combin\u00e9e avec un catalogue des m\u00e9langes communs \u00e0 d&rsquo;autres nations, et rendue pratiquement utile par l&rsquo;addition d&rsquo;une description concise des divers processus pour brasser chacun, ce serait une b\u00e9n\u00e9diction pour l&rsquo;humanit\u00e9. \u00bb<\/p>\n\n\n\n<p>Le livre reste en impression \u00e0 ce jour, et inclut ce qui est souvent consid\u00e9r\u00e9 comme le \u00ab premier \u00bb cocktail, le whiskey sour, avec Thomas fournissant sa premi\u00e8re attestation \u00e9crite.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"711\" height=\"1024\" src=\"https:\/\/www.smws.ch\/wp-content\/uploads\/2025\/08\/img-smws-jerry-thomas-buch-711x1024.jpg\" alt=\"\" class=\"wp-image-2968\" srcset=\"https:\/\/www.smws.ch\/wp-content\/uploads\/2025\/08\/img-smws-jerry-thomas-buch-711x1024.jpg 711w, https:\/\/www.smws.ch\/wp-content\/uploads\/2025\/08\/img-smws-jerry-thomas-buch-208x300.jpg 208w, https:\/\/www.smws.ch\/wp-content\/uploads\/2025\/08\/img-smws-jerry-thomas-buch-768x1106.jpg 768w, https:\/\/www.smws.ch\/wp-content\/uploads\/2025\/08\/img-smws-jerry-thomas-buch-1066x1536.jpg 1066w, https:\/\/www.smws.ch\/wp-content\/uploads\/2025\/08\/img-smws-jerry-thomas-buch-1422x2048.jpg 1422w, https:\/\/www.smws.ch\/wp-content\/uploads\/2025\/08\/img-smws-jerry-thomas-buch.jpg 1485w\" sizes=\"(max-width: 711px) 100vw, 711px\" \/><\/figure>\n<\/div>\n<\/div>\n\n<h2 class=\"wp-block-heading\">Le plus grand barman de l&rsquo;histoire am\u00e9ricaine<\/h2>\n\n<p>De retour \u00e0 New York City une fois de plus, Thomas a servi comme chef barman au Metropolitan Hotel, avant d&rsquo;ouvrir son propre bar \u00e0 Broadway et 22nd Street, qui, selon Herbert Asbury dans un article de d\u00e9cembre 1927 pour l&rsquo;American Mercury de H L Mencken, \u00ab &#8230;devint l&rsquo;un des saloons les plus c\u00e9l\u00e8bres de l&rsquo;histoire de la ville \u00bb.<\/p>\n\n<p>Apr\u00e8s sept ans l\u00e0-bas, Thomas a vendu la propri\u00e9t\u00e9 et a d\u00e9m\u00e9nag\u00e9 au 1239 Broadway, o\u00f9 il a pr\u00e9sid\u00e9 pendant huit ann\u00e9es suppl\u00e9mentaires, avant de faire son dernier d\u00e9m\u00e9nagement en centre-ville en 1875, \u00e9tablissant Thomas&rsquo;s Exchange au No.3 Barclay Street.<\/p>\n\n<p>Thomas est mort d&rsquo;un accident vasculaire c\u00e9r\u00e9bral le 15 d\u00e9cembre 1885, ayant perdu beaucoup d&rsquo;argent dans des investissements de Wall Street. Telle \u00e9tait sa c\u00e9l\u00e9brit\u00e9 \u00e0 cette \u00e9poque que les journaux dans tous les \u00c9tats-Unis ont publi\u00e9 des n\u00e9crologies, incluant le New York Times, qui a not\u00e9 qu&rsquo;il \u00e9tait \u00ab &#8230;\u00e0 un moment mieux connu des hommes de club et des hommes du monde que tout autre barman dans cette ville, et il \u00e9tait tr\u00e8s populaire parmi toutes les classes \u00bb. Il a \u00e9t\u00e9 enterr\u00e9 au cimeti\u00e8re Woodlawn dans le Bronx, New York.<\/p>\n\n<p>Herbert Asbury a d\u00e9crit Jerry Thomas comme \u00ab le plus grand barman de l&rsquo;histoire am\u00e9ricaine \u00bb et a peint un portrait m\u00e9morable de lui, \u00e9crivant : \u00ab Il \u00e9tait en effet une figure imposante et seigneuriale d&rsquo;homme&#8230; corpulent, lisse et jovial, et pourtant poss\u00e9d\u00e9 d&rsquo;une immense dignit\u00e9. Une veste de blanc pur et sans tache enveloppait sa grande masse, et une \u00e9norme et belle moustache, soigneusement taill\u00e9e dans le style saisissant appel\u00e9 morse, ornait sa l\u00e8vre et reposait caressante sur ses joues rondes et roses.<\/p>\n\n<p>Il pr\u00e9sentait un spectacle inspirant alors qu&rsquo;il s&rsquo;appuyait sur l&rsquo;acajou poli de son bar, au milieu de l&rsquo;\u00e9clat de l&rsquo;argent poli et du verre taill\u00e9, et pronon\u00e7ait de mani\u00e8re impressionnante le salut imm\u00e9morial : \u00ab Que puis-je vous servir, messieurs ?
