Dans le troisi\u00e8me volet de notre Peat Plants Creators Collection, nous poursuivons notre voyage de d\u00e9couverte \u00e0 travers les ar\u00f4mes puissants de la tourbe. Cette collection pr\u00e9sente des whiskys longuement vieillis d’Islay et de Campbeltown, \u00e9lev\u00e9s soit en f\u00fbts d’oloroso, soit en f\u00fbts de bourbon. Deux de nos profils gustatifs y sont repr\u00e9sent\u00e9s et ces quatre whiskys illustrent l’\u00e9norme diversit\u00e9 qu’il y a \u00e0 d\u00e9couvrir dans ce domaine. De la bruy\u00e8re et de la fum\u00e9e de bois \u00e0 l’iode et \u00e0 la viande fum\u00e9e, le verre a beaucoup \u00e0 offrir. Cette Creators Collection est faite de la mati\u00e8re dont on tisse les r\u00eaves\u00a0: quatre distilleries embl\u00e9matiques dont les whiskys sont fa\u00e7onn\u00e9s par la tourbe c\u00f4ti\u00e8re, et une exploration de la mani\u00e8re dont les paysages maritimes mod\u00e8lent certains des whiskys les plus typ\u00e9s d’\u00c9cosse.<\/p>\n\n

Savourez ce profond voyage sensoriel au royaume du whisky tourb\u00e9, un envol ph\u00e9nolique de la c\u00f4te atlantique d’Islay au port historique de Campbeltown. Ces embouteillages offrent une remarquable diversit\u00e9 aromatique issue d’un vieillissement dans quatre types de f\u00fbts\u00a0: refill bourbon, first fill American oak oloroso, first fill Spanish oak oloroso et STR oloroso-seasoned barrique.<\/p>\n\n

Fum\u00e9 et fruit\u00e9<\/p>\n\n\n\n

Le Panel se retrouva dans la cave \u00e0 cigares d\u2019une vieille biblioth\u00e8que d\u2019Islay, entour\u00e9 d\u2019anciens manuscrits de v\u00e9lin et d\u2019ar\u00f4mes de p\u00e2tisseries danoises aux abricots. Non loin de l\u00e0, des bougies illuminaient les \u00e9tag\u00e8res poussi\u00e9reuses, alors que nous pr\u00e9parions le caf\u00e9 glac\u00e9 parfait. Un orage ph\u00e9nom\u00e9nal se d\u00e9cha\u00eena dehors au moment de la d\u00e9gustation en bouche\u00a0avec d\u00e9flagration tropicale et p\u00e9troli\u00e8re, panna cotta fum\u00e9e et vin de dessert trop vieux, d\u00e9gageant une chaleur de cannelle. L\u2019eau calma la temp\u00eate et la sc\u00e8ne devint une salle des alambics de distillerie de rhum o\u00f9 une crumble aux prunes cr\u00e9meuse refroidissait \u00e0 c\u00f4t\u00e9 de fudge \u00e0 la vanille. En finale, les membres du Panel se voyaient prenant place dans des fauteuils en cuir, avec cake aux fruits tropicaux, th\u00e9 noir bouillant et une bo\u00eete de cigares ouverte voisinant tabac pour narguil\u00e9 \u00e0 la pomme. Apr\u00e8s 18 ans de maturation sous f\u00fbt Hogshead ex-Bourbon, nous avons transf\u00e9r\u00e9 cette goutte en f\u00fbt Hogshead de ch\u00eane am\u00e9ricain, de premier remplissage Oloroso.<\/p>\n<\/div>\n<\/div>\n\n

Audacieux et tourb\u00e9<\/p>\n\n\n\n

Avez-vous jamais bu une bi\u00e8re brune fonc\u00e9e genre quadruple belge ou une Doppelbock allemande\u00a0? Les initi\u00e9s reconna\u00eetront sans probl\u00e8me. Les novices, eux, trouveront de complexes ar\u00f4mes de dattes, figues et prunes combin\u00e9s avec une douceur malt\u00e9e et un fum\u00e9 sombre et distinctif. En bouche, le Panel trouva fraises m\u00fbres servies avec une sauce dessert fum\u00e9e au caramel et vinaigre balsamique ou une Sauce Tabasco Chipotle. A vous de voir! L\u2019eau ajouta des notes de chiche-kebab \u00e0 la saucisse de Cumberland dans une sauce tomate \u00e9pic\u00e9e \u00e0 base de paprika, poudre de curry, miel, ail et thym. Comme parfait accompagnement, une traditionnelle, forte, ronde en bouche et cors\u00e9e pinte de Scottish 80 Shilling. Apr\u00e8s 21 ans de maturation sous f\u00fbt Hogshead ex-Bourbon, nous avons transf\u00e9r\u00e9 ce whisky en f\u00fbt Hogshead ch\u00eane espagnol de premier remplissage Oloroso.<\/p>\n<\/div>\n\n\n\n

Installez-vous et relaxez-vous\u2026Vous allez bient\u00f4t \u00eatre r\u00e9compens\u00e9s. Plein d\u2019ar\u00f4mes fruit\u00e9s en attaque olfactive, y compris poires caram\u00e9lis\u00e9es, ananas et mangue grill\u00e9s suivis d\u2019un parfum de fromage bleu doux, genre Gorgonzola Dolce italien ou Cambozola allemand. La goutte se d\u00e9veloppe dans le verre d\u00e9clinant des notes de salade de cresson avec assaisonnement d\u2019huile d\u2019olive. Plein de suie et poussi\u00e8re de charbon en bouche, fromage de ch\u00e8vre doux cendr\u00e9 et sauce aigre-douce aux prunes. Bref, \u00ab\u00a0extraordinaire\u00a0\u00bb\u00a0! Fum\u00e9 et fruit\u00e9<\/p>\n\n\n\n

Alors que les vagues s\u2019\u00e9crasaient sur le pont, c\u2019\u00e9tait le branle-bas de combat en cuisine \u2013 homard grill\u00e9 au barbecue arros\u00e9 d\u2019huile de thym et de romarin et pilchards napp\u00e9s de tapenade aux olives noires. Une bouff\u00e9e de fum\u00e9e de bruy\u00e8re et de lavande introduisit cheddar de l\u2019Ile de Mull cendr\u00e9 avec saumon fum\u00e9 et maquereau poivr\u00e9, le tout accompagn\u00e9 d\u2019un verre d\u2019hydromel. La dilution r\u00e9v\u00e9la une note encore plus originale de fromage de ch\u00e8vre, bleu et chutney fermier servis sur des balles de foin avec th\u00e9 au jasmin et quartiers de citron vert calcin\u00e9s. En fin de repas, maquereau infus\u00e9s de piments ancho, Smokies d\u2019Arbroath et bonbons menthol\u00e9s arriv\u00e8rent dans un nuage de suie et de cendre fines.
