This new collection dives deeper into the medicinal heart of peated whisky, drawing its character from the brutal beauty of the isles that produce it – Islay, Mull, Lewis, and beyond – where the peat is richer in seaweed, lichen, and salt air. Each dram captures the elemental drama of the Western Isles: bracing winds, burning hearths, and the tang of sea spray on soot-streaked skin.
Where our original Peat Plants explored the diverse sensory palette of Scotland’s peatlands, in Part II we focus in on their most evocative, uncompromising expressions. Expect flavours of ethanol-soaked bandages, coal sacks in a damp stone cellar, toothpaste in an old tin mug, chimney soot, and the smouldering soul of a wood-burning stove on a stormy night.
